A Family Favorite Meal

Some of you may not know, but I did an internship in college where I was a 4-H camp counselor. It was a long, busy summer, but I learned so much and met some great friends! One thing we did at camp every week for kids was cook in a dutch oven using charcoals. One of those meals was enchiladas, and it is now a family favorite at our house! Super easy to make and always delicious! In the summer, I still like to use our dutch oven and cook it outside with charcoals, but during the winter, I use a regular dutch oven and bake it inside! Here’s the recipe!

Dutch Oven Enchiladas

Ingredients:
2 lbs ground beef or 5-6 chicken breasts (we prefer ground beef)
1 can green or red enchilada sauce
1 can beef broth or chicken broth
1 can green chiles
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
4 cups shredded cheese
tortillas
salt & pepper to taste

Directions:
1. Brown hamburger or bake chicken.
2. Mix together enchilada sauce, broth, green chiles, cream of mushroom soup, cream of chicken soup, sour cream, and 2 cups shredded cheese.
3. Add in ground beef or chicken once cooked.
4. Lay tortilla in bottom of dutch oven.
5. Pour about half a cup of mixture onto tortilla & sprinkle a handful of cheese.
6. Lay another tortilla.
7. Repeat steps 5 & 6 until mixture is gone.

If using conventional oven, bake at 350 for 45 minutes. Remove lid and bake for another 10 minutes.

If cooking with charcoals or fire, cook until mix is bubbly and crisp around the edges. If using charcoals, be sure to evenly spread charcoals underneath dutch oven and also on top of the lid!

Serve with sour cream, tortilla chips, and salsa, and it becomes the perfect meal for the family!
